Ingredients
- 1 Medium sized eggplant
- 1 Small red onion (1/2-1 cup when chopped)
- 4 Medium sized tomatoes
- 4 Cups shredded cheddar cheese
- 1/2 Cup chopped cilantro or parsley
- 2 Teaspoons Lawry’s Season Salt
- 1 Tablespoon black pepper
- 1/2 Tablespoon garlic salt
Instructions
- Peel and chop eggplant, tomatoes, and onions into small cubes
- Place all ingredients (including spices) into a bowl and mix well
- Spray casserole dish with Pam or other non-stick spray and add vegetable mix into the dish
- Spread shredded cheese over the top, cover, and bake at 375f for 45 minutes to an hour
Can be served as a delicious vegetarian main dish or as a side.
