Cheesy Eggplant Casserole

Yields: Serves 4-6

Ingredients

  • 1 Medium sized eggplant
  • 1 Small red onion (1/2-1 cup when chopped)
  • 4 Medium sized tomatoes
  • 4 Cups shredded cheddar cheese
  • 1/2 Cup chopped cilantro or parsley
  • 2 Teaspoons Lawry’s Season Salt
  • 1 Tablespoon black pepper
  • 1/2 Tablespoon garlic salt

Instructions

  1. Peel and chop eggplant, tomatoes, and onions into small cubes
  2. Place all ingredients (including spices) into a bowl and mix well
  3. Spray casserole dish with Pam or other non-stick spray and add vegetable mix into the dish
  4. Spread shredded cheese over the top, cover, and bake at 375f for 45 minutes to an hour

Can be served as a delicious vegetarian main dish or as a side.
