INGREDIENTS:
- 20-25 Small Shrimp (Peeled & De-veined)
- 1 Large Avocado
- 1 Cup Halved Cherry Tomatoes
- 1 Half Cucumber
- 1/2 Cup Diced Red Onion
- 1/2 Cup Chopped Cilantro or Parsley
- 1/2 Cube Salted Butter melted
- 1 Tablespoon Lime Juice
- 1 Tablespoon Olive Oil
- 1 Tablespoon Balsamic Vinaigrette
- Pepper to taste
INSTRUCTIONS:
- Place melted butter in a bowl and toss shrimp to coat well in butter
- In a heated skillet, fry shrimp over medium high heat on both sides until cooked through
- Remove from skillet and let cool
- While shrimp is cooling; in a bowl, add tomatoes, cubed cucumbers, cubed avocado, diced red onion, and parsley or cilantro and toss
- Add olive oil, pepper, lime juice, and balsamic vinaigrette and toss to mix ingredients
- Add shrimp and toss again
