Avocado Shrimp Cucumber Salad

INGREDIENTS:

  • 20-25  Small Shrimp (Peeled & De-veined)
  • 1  Large Avocado
  • 1  Cup Halved Cherry Tomatoes
  • 1 Half Cucumber
  • 1/2  Cup Diced Red Onion
  • 1/2  Cup Chopped Cilantro or Parsley
  • 1/2  Cube Salted Butter melted
  • 1  Tablespoon Lime Juice
  • 1  Tablespoon Olive Oil
  • 1  Tablespoon Balsamic Vinaigrette
  •  Pepper to taste

INSTRUCTIONS:

  1. Place melted butter in a bowl and toss shrimp to coat well in butter
  2. In a heated skillet, fry shrimp over medium high heat on both sides until cooked through
  3. Remove from skillet and let cool
  4. While shrimp is cooling; in a bowl, add tomatoes, cubed cucumbers, cubed avocado, diced red onion, and parsley or cilantro and toss
  5. Add olive oil, pepper, lime juice, and balsamic vinaigrette and toss to mix ingredients
  6. Add shrimp and toss again
