Sugar Cookies With Royal Icing

Ingredients

Cookies

  • 2 1/2 Cups unsalted butter (room temp)
  • 3 Cups sugar
  • 3 Large eggs
  • 3 Tsp vanilla extract
  • 6 3/4 Cups all purpose flour
  • 3/8 Tsp salt
  • 1 1/2 Tbsp baking powder

Royal Icing

  • 6 Tbsp meringue powder
  • 8 Cups powdered sugar
  • 12-16 Tbsp water
  • 1 Tsp vanilla extract

Instructions

  1. Preheat oven to 350 degrees
  2. Start creaming the butter and sugar together. Texture should be fluffy
  3. Mix in the eggs and vanilla and then slowly start adding in the dry ingredients. The dough will be very thick. You can chill the dough, but this recipe doesn’t need to be chilled
  4. Roll out the dough and cut out your cookies
  5. Bake for 6-9 minutes, depending on the size of your cookies
  6. To make icing, combine the meringue powder and powdered sugar before adding your water
  7. Mix well with a hand mixer for 10-12 minutes on low or until it loses sheen
  8. Separate for colors, but place a damp towel over the bowl to keep it from drying out. Add powdered sugar or water to thicken or thin the icing to suit your needs
  9. Decorate with piping bags
